Prof. Mrs. Sarah Darkwa is a Professor of Food Science at the University of Cape Coast (UCC). Prior to that, she worked as a Food Microbiologist at Fruits and Flavour Company-Asebu (an affiliate company of the then Schweppes International and D & C Company limited in Accra). She has taught and successfully supervised several undergraduate projects, graduate and post-graduate theses. Her research interest is in Food Science, Nutrition and Health, and Food Environment. Prof Darkwa is an external examiner in Food and Nutrition for universities in Ghana and internationally. She has also facilitated and presented at several local, national and international seminars, workshops and conferences. She has served as chair and member of several UCC committees and boards. She is a recipient of the Delta Kappa Gamma World Fellowship for Women Educators, USA, State University of New York, College of Environmental Science & Forestry, Syracuse, New York Award of Excellence, Alumni Memorial Scholar of Honourable Mention and Green Ink Award. She is an Australian Leadership Award Fellow to the University of Sydney, Australia, a Fulbright Scholar and a Fellow of the Academy of Arts and Sciences. She has authored a number of publications in local, national and international journals based on her arears of interest and specialization. She is currently the Dean of the School of Graduate Studies, UCC. She has previously served as the Vice Dean of the Faculty of Science and Technology Education, the Head, Department of Vocational and Technical Education, and the Chairperson for the three-member Interim Management Committee that managed the administrative activities of the Cape Coast Technical University.
