THE VINEYARD
Pinotage grapes for this wine were harvested from dry land bush vines of Knollerfontain farm in Voo-Paardeberg and high-altitude vineyards in Breedekloof. For additional interest and complexity, we blended Shiraz from Stellenbosch and Swartland Mourvédre to the wine.
WINEMAKING
The bulk of this wine was fermented in Stainless steel tank and matured in these tanks with staves, 20% was fermented in open top fermenters using both wild and commercial yeast. The 20% consist of Pinotage from a top breedekloof vineyard 700M in altitude, and Organic Mourvedre from Kasteelsig in the Swartland these wines were matured in old barrels mostly 3rd to 5th fill.
